English-Muffin Egg Pizzas We love to use English Muffins in a variety of ways at our house and Pizza is one. We discovered this recipe for Egg Pizzas and thought it would be something different to try. It is pretty good, so I thought I’d share it.
4 English muffins peanut oil tomato slices 2 hard boiled eggs, sliced grated mozzarella or Provolone oregano (or parsley) I prefer the parsley salt (kosher works best)
1. Make Hard-boiled Eggs. 2. Toast 8 English-muffin halves and place on a cookie sheet. 3. Drizzle each with oil, then layer on tomato slices, hard boiled egg slices (1/2 an egg) and a little grated mozzarella. Sprinkle with oregano and kosher salt. 4. Broil 5 minutes or until the cheese melts.
