Marinated Tomatoes on Tuscan Toast

Sliced Marinated Tomatoes

One of our favorite dishes at our house is this recipe. We all love it and try to make it as often as we can. I make up a lot of them and we all eat several each. I don't make anything else with this. It is a stand alone meal for us.


Marinated Tomatoes on Tuscan Toast

Ingredients:
1⁄4 cup vegetable oil
3 tablespoons apple cider vinegar
1 teaspoon Dijon mustard
2 cloves garlic, crushed
1 teaspoon sugar
1/8 tsp. salt and 1/8 tsp. pepper (omit salt for a lower sodium dish)
3 tomatoes, sliced into 4 thick slices each tomato
1 medium yellow/red onion, sliced (I use sweet yellow or vidalia onions)
12 slices Italian or Italian garlic and herb bread (homemade bread works great also)
12 slices mozzarella cheese (Use a low sodium or low fat cheese for a healthier version)
chopped parsley

DIRECTIONS
In a bowl, whisk together oil, vinegar, mustard, garlic and sugar.
Add salt and pepper.
Add tomatoes and onion and let stand at room temperature for 40 minutes  blending the flavors together.

Broil bread slices for 1 minute
Remove from oven and spoon a generous amount of seasoned oil over bread.
Top with cheese, tomato, onion and parsley
Place back in oven for another 7 minutes (broiler on low)

Serve warm
