Pumpkin Toffee Cookies Recipe

I love Autumn, and all the delicious aromas that you encounter. Cooking and baking are a great way to
warm the house. The smells tantalize the senses and all seems right with the world. :) This recipe should brighten your mood. Filling your home with the aroma of Autumn and goodness.


Ingredients

2-¼ cups Flour

1 teaspoon Baking Powder

1 Tablespoon Baking Soda

2 1/2 teaspoons Cinnamon

3/4 Tablespoon Nutmeg

½ teaspoons Salt

½ cups Butter, Softened

1 cup Sugar

½ cups Brown Sugar

1 Egg

1 cup Pumpkin Puree, Canned

1 teaspoon Pure Vanilla

8 ounces, Toffee Bits

*Optional (for drizzling) ½ cups White Chocolate,melted


Preparation

Preheat oven to 350ºF. 

Combine flour, baking powder, baking soda, cinnamon, nutmeg and salt in a bowl. Set this aside.

In a mixer, cream together butter and sugars. Add the egg, pumpkin and vanilla. Slowly add in the flour mixture. Add toffee bits.

Drop cookies onto lined baking sheet using a tablespoon. Bake about 10 minutes. Let cool on baking sheet for 2-4 minutes before removing to a wire rack.

* (Optional)  When cookies have cooled completely, drizzle on white chocolate. Let chocolate set before storing.

This recipe makes about 4 dozen cookies.
