CountryLife4Me's Country Potato Salad Recipe
What is independence Day without Potato Salad? That is one of my favorite dishes for this time of year (well anytime really) Here is a really good Potato Salad recipe for your Independence Day Cook out/Picnic
Ingredients
5 medium red potatoes, cubed
1 1/2 cup Miracle Whip
1 TBS Cider Vinegar
1 TBS Yellow Mustard
1 teaspoon salt
1/4 teaspoon pepper
1 Stalk Celery Chopped
4 hard-cooked eggs, chopped
1 sweet pickle, finely chopped
1 onion, chopped
1 tsp.Paprika
Directions
Place potatoes in a saucepan and cover with water. Bring to a boil. Reduce heat; cover and simmer for 20-25 minutes or until tender. Drain and cool.
In a large bowl, combine the Miracle Whip, vinegar, mustard salt,and pepper. Stir in the potatoes, eggs, pickle, celery and onion. Sprinkle lightly with paprika.
Chill for at least 4 hours.
