Low Sodium Beef Stew Recipe

Low Sodium Beef Stew
As someone with considerably high Blood Pressure I try to eat a low sodium diet as much as possible. Here is a recipe you will enjoy.




Ingredients for low sodium beef stew:

  • 1 pound beef steak
  • 2 teaspoons oil
  • 2 cups diced onions
  • 1 cup diced celery
  • 1 cup diced tomatoes
  • 1/2 cup diced red potatoes 
  • 1 cup diced carrots
  • 2 cloves of garlic, chopped
  • 1/4 cup red wine vinegar
  • 1 teaspoon balsamic vinegar
  • 3 cups low-sodium vegetable beef stock
  • 1 teaspoon thyme
  • 1 tablespoon parsley
  • 1 tablespoon dried oregano


Note: You can also use Sweet Potatoes/Yams, Mushrooms, and sage along with what ever other spices or veggies you want to add to the pot.

Directions:

Preheat broiler to medium heat. Broil steak 12 to 13 minutes turning only once. Remove from heat and let stand  while preparing vegetables.

In a stock pot, saute vegetables in oil over medium-high heat for about 8-10 minutes.

Pat meat dry with paper towel. Dice grilled steak, add to pot. Next add your vinegars, stock, herbs and spices.

Bring to simmer and let cook 1- 1 & 1/2 hours, until stew has thickened .

Serve hot. Enjoy!
