Chunky Country Style Salsa. What could be better than that. This is a very good salsa recipe and it makes a good bit. Serve this with nachos, tortilla chips, add it to chili or burritos. It will become a favorite of yours.
3 cans (10 -12 Ounce) diced Tomatoes with Green Chilies
1/3 cup Chopped Onion
2 cloves Garlic, Minced
1/8 Jalapeno, Sliced Thin (I don't eat jalapeno so I usually omit this but you can add up to 1 whole jalapeno sliced) Salsa does not need this added if you're allergic or just don't like them. You can add regular green/red pepper if you want to add them in.
1/3 teaspoon Sugar
1/4 teaspoon Salt
1/4 teaspoon Ground Cumin
1/2 cup Fresh cut parsley (use can also use Cilantro)
Lime/lemon Juice (a few spritzes)
Note: this is a large batch.Use a 12-cup food processor.
Combine tomatoes with onion, jalapeno, garlic, sugar, salt, cumin, lime/lemon juice, and parsley/cilantro in a food processor. Pulse until you get the salsa to the consistency you'd like---I do about 5-12 pulses. I like my salsa chunky and will use on burritos, especially breakfast burritos.
Refrigerate salsa for an hour to an hour and a half and serve with tortilla chips ,nachos or on a burrito. You can also add this to chili. Very good.
