Cheesy Mashed Potato Balls

These are delicious. So tasty. These are fried. I know , I know, very unhealthy. But hey,use a healthy oil like coconut or olive oil and fry them up. You'll love them. Make them with all your Holiday Cooking Meals.


INGREDIENTS
Left over Mashed Potatoes or  1 pouch Betty Crocker roasted garlic mashed potatoes
2 tablespoons butter
1/2 cup milk
3 slices bacon (I use vegan bacon, as I'm vegetarian)
3/4 cup shredded cheddar cheese (Velveeta shreds work wonderfully too)
1 large egg
2 tablespoons snipped chives
1 1/2 cup bread crumbs (Unseasoned works well, but you can use seasoned ones also)
4 cups canola oil

DIRECTIONS
Use left over Mashed potatoes or you can Cook Betty Crocker mashed potatoes according to package directions. You use the butter and milk here. Once they are made, let cool .
Cook  bacon until crispy. Set aside; crumble into bits.
In a  bowl, combine the potatoes, cheese, egg, chives and bacon. Mix until  combined. Using your hands, roll mixture into 1-inch balls. Toss the balls into the breadcrumbs until well covered. Set aside on a plate to rest 10-15 minutes.
Heat the oil in a large pot. When hot  lower the balls into the oil, and fry until golden. Continue in batches, and set aside.
Garnish with chives .Serve hot.
