Ingredients
- 2–3 boneless, skinless chicken breasts
- 3 cups chopped vegetables (carrots, zucchini, celery, or green beans)
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 tablespoon fresh grated ginger (or 1 tsp ground ginger)
- Juice of 1 lemon
- 3 cups low-sodium chicken broth
- 1 teaspoon turmeric
- 1 teaspoon dried thyme
- Salt & pepper to taste
- Optional: 1 cup cooked brown rice or quinoa (add at the end)
🥄 Instructions
- Place chicken in the bottom of your slow cooker.
- Add chopped vegetables, onion, garlic, and ginger.
- Pour in broth and lemon juice.
- Sprinkle turmeric, thyme, salt, and pepper.
- Cook on low for 6–7 hours or high for 3–4 hours.
- Shred the chicken gently with a fork before serving.
- Stir in cooked rice or quinoa if you want it a little heartier.
