One-Pot Creamy Veggie & Sausage Skillet
Serves 4–5 | Ready in about 30 minutes
This dinner is built for real life — inexpensive ingredients, easy cleanup, and flavors that feel warm and homey. It uses turkey or plant-based sausage, so you still get protein and richness without beef or chicken.
Ingredients
- 12–14 oz turkey sausage or plant-based sausage, sliced
- 1 tablespoon olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 cups chopped cabbage
- 1 cup sliced carrots
- 1 cup diced zucchini
- 1 cup uncooked rice (white or jasmine)
- 2 ½ cups vegetable broth
- ½ cup milk or unsweetened oat milk
- 1 teaspoon smoked paprika
- ½ teaspoon dried thyme
- Salt & pepper to taste
- Optional: shredded cheese or nutritional yeast for topping
Instructions
- Warm the oil in a large skillet or pot. Add the sliced sausage and cook until lightly browned.
- Add the onion and garlic. Cook until the onion softens — about 3 minutes.
- Stir in the veggies: cabbage, carrots, zucchini. Let them soften a bit.
- Add the uncooked rice, paprika, thyme, salt, and pepper. Stir to coat everything.
- Pour in the vegetable broth and bring the pot to a gentle boil.
- Reduce heat, cover, and simmer 18–20 minutes, until the rice is tender.
- Stir in the milk to make it creamy, then taste and adjust seasoning.
- Optional: sprinkle cheese or nutritional yeast before serving.
