Simple One-Pot Meal for Busy Evenings on a Budget

One-Pot Creamy Veggie & Sausage Skillet

Serves 4–5 | Ready in about 30 minutes

This dinner is built for real life — inexpensive ingredients, easy cleanup, and flavors that feel warm and homey. It uses turkey or plant-based sausage, so you still get protein and richness without beef or chicken.


Ingredients

  • 12–14 oz turkey sausage or plant-based sausage, sliced
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 cups chopped cabbage
  • 1 cup sliced carrots
  • 1 cup diced zucchini
  • 1 cup uncooked rice (white or jasmine)
  • 2 ½ cups vegetable broth
  • ½ cup milk or unsweetened oat milk
  • 1 teaspoon smoked paprika
  • ½ teaspoon dried thyme
  • Salt & pepper to taste
  • Optional: shredded cheese or nutritional yeast for topping

Instructions

  1. Warm the oil in a large skillet or pot. Add the sliced sausage and cook until lightly browned.
  2. Add the onion and garlic. Cook until the onion softens — about 3 minutes.
  3. Stir in the veggies: cabbage, carrots, zucchini. Let them soften a bit.
  4. Add the uncooked rice, paprika, thyme, salt, and pepper. Stir to coat everything.
  5. Pour in the vegetable broth and bring the pot to a gentle boil.
  6. Reduce heat, cover, and simmer 18–20 minutes, until the rice is tender.
  7. Stir in the milk to make it creamy, then taste and adjust seasoning.
  8. Optional: sprinkle cheese or nutritional yeast before serving.
