Ingredients
1 1/2 cup yellow cornmeal
1/2 cup all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
1 large egg, room temperature, lightly beaten
3/4 cup milk
1 onion, minced
Oil for frying
Directions
In a large bowl, combine the cornmeal, flour, baking powder, and salt. Beat the egg slightly, add in milk, and onion; add to dry ingredients just until combined.
In a skillet or pot, heat oil. Drop batter by tablespoonfuls into hot oil. Fry until golden brown, 3 or 4 minutes. Drain on paper towels. Serve with fish, chicken, shrimp, or corn dogs for a great meal.
