 Roasted Chicken

Roasted chicken is not only tasty but also versatile. You can serve it with lots of different sides, like mashed potatoes, steamed vegetables, or a fresh salad. Using herbs adds a special flavor that makes the chicken extra delicious. Herbs like rosemary, thyme, and parsley not only taste great, but also makes your dish look appetizing.

Ingredients


Here’s what you’ll need:


- 1 whole chicken (about 4–5 pounds)
- 2 tablespoons olive oil
- 1 tablespoon salt
- 1 teaspoon black pepper
- 1 tablespoon dried rosemary
- 1 tablespoon dried thyme
- 1 lemon, cut into wedges
- Fresh herbs for garnish (This step is optional)

Instructions


Step 1: Prepare the Chicken
Start by preheating your oven to 425°F While the oven is heating, take your chicken and remove any giblets. Rinse the chicken under cold water, then pat it dry with paper towels. [This step is important because a dry chicken will roast better and get crispy skin].

Step 2: Season the Chicken
In a bowl, mix together the olive oil, salt, black pepper, rosemary, thyme, and minced garlic. Rub this mixture all over the chicken, making sure to get it in the cavities and under the skin for more flavor. Don’t forget to rub some seasoning on the inside of the chicken, too.


Step 3:
Add Lemon
Take the lemon wedges and place them inside the chicken's cavity. The lemon will add a nice citrus flavor and help keep the chicken moist while it cooks.

Step 4: Roast the Chicken
Place your seasoned chicken breast-side up in a roasting pan. Put the pan in the preheated oven and roast for about 1 hour and 25 minutes,
Step 5: Rest Time
Once the chicken is cooked, take it out of the oven and let it rest. It should rest for about 15 -20 minutes. This allows the juices to redistribute, making the chicken more tender and juicy.
