This is one of those recipes I make again and again because it's incredibly easy, tastes fresh, and is naturally low in fat and sodium. The best part? It takes less than 20 minutes from start to finish.

Easy Lemon Herb Chicken & Quinoa Power Bowl

Prep Time: 10 minutes

Cook Time: 15 minutes

Servings: 4



Ingredients

  • 1 pound boneless, skinless chicken breast
  • 1 cup uncooked quinoa
  • 2 cups low-sodium or no-salt-added chicken broth (or water)
  • 2 cups broccoli florets
  • 1 cup sliced cucumbers
  • 1 cup cherry tomatoes, halved
  • 1 tablespoon olive oil
  • Juice of one lemon
  • 2 teaspoons garlic powder (salt-free)
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 1 teaspoon black pepper
  • Fresh parsley (optional)

Directions

  1. Cook the quinoa according to package directions using low-sodium broth or water.
  2. While the quinoa cooks, cut the chicken into bite-sized pieces.
  3. Heat olive oil in a large skillet over medium heat.
  4. Season the chicken with garlic powder, onion powder, Italian seasoning, and pepper.
  5. Cook for about 6–8 minutes until the chicken reaches 165°F.
  6. Steam the broccoli until tender-crisp.
  7. In each bowl, add quinoa, broccoli, cucumbers, tomatoes, and chicken.
  8. Squeeze fresh lemon juice over everything and sprinkle with parsley.

Serve immediately.

As I've gotten older, I've learned that healthy food doesn't have to be bland. Fresh lemon makes everything taste brighter, and the herbs add plenty of flavor without relying on salt.
