Moist Chocolate Banana Bread

                                                      Chocolate Banana Bread Recipe:




Ingredients:

1 3/4 cups all-purpose flour

1/4 cup unsweetened cocoa powder

1 cup granulated white sugar

1 teaspoons baking powder

1/4 teaspoon baking soda

1/4 teaspoon salt

2 large eggs, lightly beaten

1/2 cup water (needed or the cocoa will dry out the bread)

1/2 cup (room temperature butter)

3-4 ripe bananas mashed well (about 1-1/2 cups)

1 teaspoon vanilla extract (I don't use this as I get sick from it)

Directions:

Preheat oven to 350 degrees and place oven rack to middle position.  spray the bottom and sides of a loaf pan with a non stick spray

In a large bowl whisk together the flour, cocoa powder, sugar, baking powder, baking soda, and salt.

In another bowl combine the mashed bananas, eggs, water, butter, and vanilla.
With a wooden spoon, add the banana mixture into the dry ingredients until batter is thick.

Scrape batter into prepared pan. Bake about 60 to 65 minutes. Place on a wire rack to cool, then remove from the pan.

Can be stored for 4-6 days, or frozen for about 1 month.

Makes 1 - 9 x 5 x 3 inch loaf.
