Lighter Healthier Reuben Sandwich


Lighter Healthier Turkey Rueben Sandwich

There are only about 300 calories in this hearty healthy delicious reuben sandwich.

Ingredients
  • 2 tablespoons Dijon mustard 
  • 8 slices Rye/Potato/Oatmeal bread (most people use rye. I hate it)
  • 4  slices low-fat, reduced-sodium Swiss cheese
  • 8 ounces turkey/ smoked turkey, thin sliced
  • 2/3 cup sauerkraut, drained 
  • 1/4 cup low fat Thousand Island dressing
  • 1 tablespoon canola oil, divided  ( I don't use the oil, I use cooking spray instead- like olive oil spray for a lighter healthier sandwich ).
Preparation
  • Spread about 3/4 teaspoon mustard over each bread slice. Place 1 cheese slice on each of 4 bread slices. Divide turkey evenly over cheese. Top each with 2 to 2 1/2 tablespoons sauerkraut and 1 tablespoon dressing. Top each with another slice of bread with the mustard side down.
  • Heat 1 1/2 teaspoons  oil in a large skillet over medium heat. Add 2 sandwiches to pan. Cook 1-3 minutes on each side or until golden; remove  from pan, keep warm. Repeat for all sandwiches.
