Black Bean & Salmon Tostadas

Healthy eating can taste fabulous. This recipe is healthy and full of flavor. It is a good choice for the health conscious person. Perk up your canned salmon. Serve with
some brown rice cooked with spinach, and tomatoes for a completely healthy dish. You're going to love eating healthy.

Makes: 4 servings, 2 tostadas each

INGREDIENTS
8  6-inch corn tortillas
cooking spray
1  6-ounce can boneless, wild salmon, make sure to drain well
1 avocado, diced
Fresh Spinach leaves chopped , about 1 cup
1 1/2 (Plus 1/2 cup additional for topping)  cups coleslaw mix (you can also use cabbage if you like)
1  tablespoon chopped cilantro
1  16 ounce can black beans, rinse and drain well
3 1/2  tablespoons sour cream (you can use reduced fat also)
2 1/2 tablespoons salsa
2 small onions, chopped


PREPARATION
 preheat oven to 375°F.
Coat tortillas on both sides with cooking spray. Place on 2 baking sheets. Bake, turning once, about  12  minutes.
Combine salmon spinach  and avocado  in a bowl. Mix together the coleslaw and cilantro and add to salmon mixture . Process black beans, sour cream, salsa and onions  in a food processor until smooth. Transfer to a microwave. Cover and microwave on High, about 2 -2  1/2 minutes.
Spread each tortilla with some bean mixture and some salmon mixture and top with additional  coleslaw.
