I get kind of lazy sometimes and I cheat on my recipes. I have a delicious pineapple upside down cake recipe using a cast iron skillet and a boxed cake mix. Which I usually buy by the dozen. Just to have on hand for those lazy days.

Baking this cake in a seasoned cast iron skillet is definitely the way to go! This is a no-fuss boxed yellow cake recipe..Instructions::
- Prepare yellow cake mix as directed on the box.
- Preheat the oven to 350 degrees
- Place 1/4 cup melted butter in cast iron skillet.
- Put 1 cup of brown sugar over the butter.
- Drain pineapple rings and place them on top of the brown sugar
- Place a cherry in the middle of each of the pineapple rings (this is optional)
- Carefully pour the cake batter over the pineapples. Use caution as to not move the pineapples or the cherries around. Making sure they stay put.
- Bake for 30–35 minutes. Remove cake from oven. Let cool for 10–15 minutes.
- Place a large plate over the skillet and quickly and carefully flip the pan upside down onto the plate. You now have a delicious looking and tasting Pineapple Upside Down Cake
