Ingredients

  • 4 boneless skinless chicken breasts

  • 3 cloves garlic, minced

  • 1 cup low-sodium chicken broth

  • 1 cup light coconut milk or half & half

  • ½ cup grated parmesan cheese

  • 1 cup fresh spinach

  • ½ cup sun-dried tomatoes (packed in oil, drained)

  • 1 tsp Italian seasoning

  • 1 tbsp olive oil

  • Salt and pepper to taste

Instructions

Step 1: Sear the Chicken

Heat olive oil in a large skillet over medium heat.
Season chicken with salt, pepper, and Italian seasoning.
Cook 5–6 minutes per side until golden and cooked through. Remove and set aside.

Step 2: Make the Garlic Cream Sauce

In the same pan, sauté garlic for about 30 seconds.
Add chicken broth and scrape up browned bits (flavor!).
Stir in coconut milk and parmesan. Simmer 3–5 minutes until slightly thickened.

Step 3: Add the Tuscan Flavor

Stir in sun-dried tomatoes and spinach.
Return chicken to the pan and simmer 5 minutes.

Sauce thickens beautifully and coats the chicken perfectly.
