Carrot Cake with Cream Cheese Frosting

Moist Carrot Cake

This is a wonderful carrot cake recipe. It's delicious and moist. The Cream Cheese Frosting is listed below for those who want it. I know some don't like cream cheese and some don't want the calories, but for others it is listed.


2 cups all-purpose flour
2 teaspoons baking soda
1/2 teaspoon salt
2 teaspoons ground cinnamon
3 large eggs
2 cups sugar
3/4 cup vegetable oil
1 teaspoons vanilla extract
2 cups grated carrot

How To:

Grease and flour 2 pans. Set pans aside.
Mix together the first 4 ingredients.

Beat eggs and next 3 ingredients at medium speed with an electric mixer. Add flour mixture, beating at low speed until blended. Add carrots. Pour batter into prepared cakepans.

Bake at 350 degrees for 30 minutes. Cool on wire racks 15 minutes. Remove from pans, and cool completely. Spread

Note: You can frost with Cream Cheese Frosting to your cake and add in between layers as well.

Cream Cheese Frosting

1 package (8 oz) cream cheese, softened
1/4 cup butter or margarine, softened
3 teaspoons milk
1 teaspoon vanilla
4 cups powdered sugar
