Muffin Tin - Hush Puppies
I have been finding a lot of uses for my muffin tins lately. For Macaroni cups, poached eggs, pizza cups and more. I have now used them for Hush Puppies.
Hush Puppies are a great side dish for any seafood. They're great for snacking. They’re also delicious with tarter sauce!
Ingredients:
- 1/2 cup cornmeal
- 1/4 cup flour
- 1 tablespoon sugar
- 1/2 teaspoon baking powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1 teaspoon salt (I use more salt than most) You can use just 1/2 tsp salt if you wish.
- 1 egg
- 1/2 cup milk
Directions:
- Whisk together cornmeal, 1/4 cup flour, 1 tablespoon sugar, 1/2 teaspoon baking powder, 1/2 teaspoon onion powder, 1/2 teaspoon garlic powder and 1 teaspoon salt.
- Whisk in 1 egg,- 1/2 cup milk-
- Spray muffin tins with cooking spray, or use paper liners .
- Divide among muffin cups - about 2-3 tablespoon each;
- Bake at 400 degrees F until set, 12 to 15 minutes.
- Remove and cool on a rack for 5 minutes.
