This, Beans and Rice dish is delicious and is freezer friendly.

Top it with sour cream, shredded cheese (Mexican blend is great) and salsa. You will love this recipe and your family will be eating a healthy dinner. Beans and rice are very nutritious.

This dish is topped with salsa, sour cream, shredded cheese, and parsley. Fresh or dried, it's your choice. 

This simple, easy, combo of healthy black beans and rice is a great budget meal, and it is far from boring.  It is loaded with flavor. We usually eat this three times a month. It's very tasty and nutritious.

 

 Ingredients

1 lb. lean ground beef or can substitute with another meat 
2 cloves garlic minced
1 onion chopped
1–15 ounce can of tomatoes
1 packet of taco seasoning
 1 -15 ounce can black beans, (drained and rinsed)
1–15 ounce can kidney beans, (drained and rinsed)
1–15 ounce can red beans, (drained and rinsed)
 
(For the beans, you can also cook the amount you will need from dry
beans) This is what I do. I have loads of dry beans in my house, so I usually use these.
 
1 teaspoon salt
1 teaspoon pepper
Prepare rice *you can use instant or long grain (you will need 1 cup for each person)
1 jar of salsa (I use mild)
Shredded cheese (I use a Mexican blend)
 

Easy Directions

In a skillet, brown your meat, with salt and pepper. Add in the onion and garlic. Make sure to Drain well.
 
Add in tomatoes.
Add in a jar of salsa
Simmer for 10 minutes. Until thoroughly heated through.
Serve over hot rice with your choice of, shredded cheese, and sour cream,
