Chocolate Chip Zucchini Brownies

 Okay, so you want your family to eat healthy. But they will have none of it. So, what do you do?

Sneak the healthy in any way you can. This is one very delicious way to get some veggies into your family's life.

And what is good about it is that they won't even know it. This recipe is so Chocolatey and delicious you can't even taste the veggies. They will never know they are there. So what are you waiting for? Let's get started.

Zucchini brownies are a healthier recipe, and these are the best zucchini brownies, to date.

 Chocolate Chip Zucchini Brownies 



Ingredients

1 cup of shredded zucchini
1 cup of granulated sugar
1/3 cup of unsalted, melted butter
1/3 cup of unsweetened cocoa powder
1/2 cup of semi-sweet or dark chocolate chips
1/2 cup of all-purpose flour
2 eggs
1 1/2 teaspoons vanilla extract
1/4 salt
1/4 baking powder


Instructions
 

Preheat oven to 350 degrees. 

 
In the bowl of an electric mixer, combine eggs, sugar and vanilla and mix on low until well combined. 
 
Slowly begin adding flour, salt, cocoa powder, and baking powder, that you have sifted together.
 
 Mix until combined, and then add the melted butter, and the shredded zucchini, (
Use the fine side of your grater. Coarser pieces will have a more noticeable flavor and also texture) and mix this a bit more.
 
 Add in chocolate chips, and mix until brownie batter is combined.
 


In a 8x8 baking pan, that is covered with parchment paper - make sure to

drape the paper over the sides, and pour in the brownie batter, and spread evenly.

 
 Bake for 22–23 minutes.
Remove from oven, and let cool on a baking rack. Cut and serve.
 

IF YOU WANT TO FREEZE - When the brownies are completely cooled you can wrap them in plastic wrap and then place into an airtight container, or in a freezer storage bag. You can also wrap them with aluminum foil.

When you are ready for the brownies again, remove them from the freezer and place them in the refrigerator overnight. You could also put them on the counter. Once they are at room temperature, they are ready to serve.
