Sunday Dinner - Fettuccine Alfredo 

 An easy sauce to make with ingredients you may already have on hand

How To Make Fettuccine Alfredo

 It's as easy as 1-2-3

 

  • Start By Cooking The pasta: Boil a pot of lightly salted water, then add the pasta to the water. Cook until al dente, and reserve some of the pasta water. Drain the pasta

  • Make sauce: Melt the butter in a saucepan. Add the garlic and cook for about 1–2 minutes. Stir in the heavy cream, and bring to a simmer to help thicken the sauce. After the sauce has thickened, stir in the cheese, and season with salt, and pepper.
  • Toss pasta in sauce: Add the pasta to the sauce, and toss. Add a small amount of the reserved pasta water.(This helps to thicken the pasta a bit)
  • Garnish and serve: Sprinkle with Fresh parsley.(you can also use dried parsley flakes)

 

Ways to make it better. Here are a few tips:

  • You Should Salt Your pasta water: Salting the water will help to flavor the pasta.
  • Save Some Of The Pasta Water: Save some of the pasta water. About 3/4 cup and use it to help coat the pasta. It has starch, and helps to thicken the Alfredo.

What To Serve With Fettuccine Alfredo?

Serve with some garlic bread and a nice side salad. Or add some stir ins, like Garlic Butter and steamed broccoli.


Ingredients

  • 12 oz. fettuccine pasta (about 3/4 pkg.)

  • 4 Tbsp. Salted butter

  • 2 cloves garlic, minced

  • 1 1/2 cups heavy cream (use heavy cream, not milk or half-N-half)

  • 1 cup shredded Parmesan cheese, (divide this)

  • 1 tsp. Table salt

  • 1/4 tsp. Ground black pepper

  • 2 Tbsp. Chopped fresh parsley

Directions

  1. Cook fettuccine:

    Bring a large pot of water to a boil. Add the fettuccine and cook according to package directions, until just al dente. Drain, reserving 1/2 cup of the cooking water.

  2. Make Alfredo sauce:

    While the pasta is cooking, melt the butter in a large saucepan over low heat. Add the garlic and cook about 1–2 minutes. Stir in the cream and bring to a slimmer over medium heat. Cook, stirring frequently, until sauce is thickened, about 4–6 minutes. Stir in 3/4 cup of cheese. Season with salt, and pepper.

  3. Combine pasta and sauce:

    Add the drained pasta to the sauce and gently toss to coat. Add a little bit of the reserved cooking water to thin the sauce.
